Every bottle of Avión Tequila starts its journey in the small town of Jesus Maria, Mexico. This inland region of Jalisco is known for growing high quality blue agave in some of the highest elevations. The agave is grown for 7-10 years before being harvested which allows the agave to build up starch levels and retain as much earthy agave flavor as possible. Every single origin Avion agave is handpicked by jimadores and slow roasted in brick ovens for three days. The low temperatures caramelize the finely roasted agave to extract ultimate sweetness and rich flavors.
Avion is distilled in locally handmade pot stills and endures a proprietary ultra slow filtration process that takes up to 10 times longer than most tequilas. Avión silver tequila does not go through any sort of aging process and heads straight to the bottle after distillation. Avion Reposado is aged for six months in American whiskey barrels and Avion Añejo is aged for two years. Furthermore, Avion Reserva 44 is aged in oak barrels for 44 months hence its name.

Avion Reserva 44 is in a class of its own. This ultra premium tequila goes through a much more intricate aging process than the other Avion tequilas. First, the extra añejo tequila is aged for 43 months in oak barrels and then is aged for an additional month in specially selected petite barrels which are rotated daily. This extra long aging process is what gives Avion Reserva 44 its caramel hue that makes the extra añejo tequila look like a rich scotch.
